CHEESECAKE(Very low-fat)                                                                                                                                                       Serving =1/12 of cake                                                                        By:   Julie McWhorter

           Crust:

Mix together:

Add:

1-1/3 cups graham cracker crumbs
   1/4 cup sugar
6 Tbsp. melted butter

Stir until thoroughly mixed; press into 10 inch cheesecake pan.  Set in freezer while you prepare filling

Cheesecake Filling:                                                                                                                                           Beat until soft: 
                   3   8-oz pkgs. Healthy Choice fat-free cream cheese                                                                Add gradually to softened cream cheese beating well until blended: 
                    1 cup sugar                                                                                                                                  After thoroughly blended and fluffy, beat in: 
                      2 tsp vanilla                   
                      2 eggs (1 at a time, beating well after each)
Blend in:       1 cup fat-free sour cream

Directions: Pour filling into cheesecake pan containing graham cracker crust.  Bake at 350 degrees F. for 60-70 minutes.   Turn oven off; leave door ajar & leave cake in oven 1 hour longer.  Place a small pan with 2 cups boiling water on rack below cheesecake inside the oven during   baking.

Serving Suggestion:   Serve as is or topped with Cherry Pie Filling (Light), canned, drained pineapple, blueberries,sliced strawberries, or peach slices.
