Beef Casserole Supreme                                                      By:       Betty Smith
Makes 8 servings

1 lb 93% lean ground beef
1 clove garlic, minced
½ lb. fresh mushrooms, sliced
½ teaspoon pepper
1 can cream celery soup
½ cup uncooked Minute Rice
1 T. dried minced onion
1 teaspoon oregano
1 teaspoon salt
1 10oz package each broccoli & spinach
1 c. fat-free sour cream
4 oz Mozzarella cheese, thin sliced or grated

Directions:

Cook & drain broccoli & spinach.
In large skillet, brown beef; drain. Add onion, garlic, oregano, salt, pepper, & mushroom. Cook 3 minutes, stirring often.
Stir in vegetables, soup, sour cream, & rice.
Spoon into casserole dish. Top with cheese, (slices or grated).

Bake at 350 degrees F. for 15-20 minutes.

Serving Suggestion:

Great served with French bread & fruit salad.
